The wine is fermented with indigenous yeasts, the ones that are in the vineyard, and the wine rests for at least eight months in French oak barrels and amphorae (clay pots). To keep both the organoleptic characteristics so as the healthy properties intact, no sulphur is added. A natural wine, more than anything, a high quality wine.
